School is back in full swing for us and I am still trying to perfect my morning routine. Between trying to get my husband out the door, feed the baby, and get my daughter off to school, it’s usually 10am before I realize I haven’t had breakfast. I’m trying to change that and make eating breakfast more of a priority. This perfect yogurt parfait is one way I’m accomplishing that.
I love Greek yogurt with honey! It’s the perfect amount of sweetness to cut the sometimes tart flavor. I like to add pecans for a little crunch, and mix in whatever fruit I have on hand- usually strawberries. The recipe is pretty self-explanatory, but I like taking the extra sixty seconds to put it in a pretty bowl. Making breakfast more of an “event” has helped me to slow down and focus on making healthier and more filling choices instead of just pouring myself a quick bowl of some sugary cereal.
Ingredients
1 container yogurt (I like Greek vanilla)
1/2 cup sliced fruit
1 tbsp honey
2 tbsp chopped pecans
I like to make a big batch of toasted caramelized pecans that will last me for the week. Chop 1/2 cup of pecans and set aside. In a small saucepan over medium heat combine 2 tbsp brown sugar, 1/2 tsp light corn syrup, 1/2 tbsp butter, 1/8 tsp cinnamon. Stir constantly until mixture is bubbly. Add the pecans and transfer mixture to a cookie sheet lined with parchment paper. Bake at 400 degrees until golden brown and toasted. Stir occasionally, and keep an eye on them because this happens quickly.
