In the practice of becoming more open and vulnerable with you, I will admit this blog post was much more difficult to write than I expected due to the unresolved pain caused by others in the past over my food choices and habits. I believe people’s food choices should never be the subject of ridicule, judgement or backhanded comments.
Granny, as she is affectionately called, is one of the best chefs I know. She rarely uses a recipe and just seasons and tastes as she goes. It was one of my life goals to be able to replicate my favorite recipes of hers, but she almost never had one to follow.
While big fans of our usual fried rice, my kids like to get creative, and as such we have made several variations of fried rice, using different flavor profiles.
Getting our daughter involved in growing, harvesting, and preparing food from our garden takes a lot of the "scary" out. I'm okay when she pops a fresh tomato in her mouth and doesn't chew it, because to me getting the fruit/vegetable in her mouth is half the battle.
So while our culture tends to glorify pregnancy as a time to eat whatever you want since you’re “eating for two,” I approached my pregnancies with a different mindset. I knew that healthy food choices would lead to a healthier pregnancy.
I knew from the beginning that I wanted my kids to experience both authentic and Tex- Mex foods. I sought out to learn as much as I could from my mother-in-law and sisters-in-law. Here are some of our favorites!
